Sunday night all by myself after a long day, tired and need a comfort food. Experimenting with my mom’s go to Catholic fish friday hockey practice in a half hour recipe. A favorite when I was 10 years old. This version is going to be tried gluten and cow dairy free, but using canned tuna.
One can tuna
Couple of spoonfuls of grape seed mayo (vegan loveliness)
Hard goats cheese grated. Only you can decide the amount used 🙂
Several handfuls of Arugula
2 cups gluten free pasta cooked
1 egg
Salt and pepper
And an oven.
Cook pasta, mix everything in a pyrex pan and bake until set….. it is in the oven right now so I am hazarding a guess and saying 20 minutes.
Will post results but by the smell of things I think I am going to be happy.
……oh yes my childhood memories include ketchup.
